Synopsis

This study aims to investigate the effects of adding to chitosan based edible films produced with extracts obtained from Amanita caesarea (AC) and Boletus reticulatus (BR) macrofungi collected from Karıncalı plateau in Zorkun region of Osmaniye province. Films were prepared by adding these extracts at different rates (25, 50, and 100 mg) and some physical and chemical properties of the films were examined. The findings of the study revealed that AC had a higher total phenolic compound content compared to BR. While films containing all AC extracts were found to be thinner than the control group, only the BR100 film was measured to be thicker. The moisture content of the films produced using both mushroom extracts was lower than the control film. The water solubility of the films decreased at low concentrations of the mushroom extract but increased at higher concentrations. The L* value, which indicates the transparency of the films, was highest in the control film and lowest in the AC100 film sample, revealing that the control film was more transparent. Moreover, bioactive components from mushroom extracts resulted in increased opacity and UV barrier properties of edible films.
