Synopsis

Food is a meal prepared using various ingredients beyond filling the stomach. It is also one of the most critical components of culture. Traditional food is a society's history, geography, and community values. In this respect, Turkish cuisine has been influenced by the vast geography and long history of the Ottoman Empire and has unique traditional flavours that differ in various regions. Today, in parallel with technological developments, some conventional dishes have started to be forgotten due to people's new lifestyles. This study will try to reveal the historical development of Turkish culinary culture and why traditional dishes have been overlooked until today. Literature about the traditional flavours of Turkish cuisine that are about to be forgotten is included in this context. As a result, reasons such as migration movements, cultural change, industrial food production, social media and the inability to transfer recipes from generation to generation have been put forward as reasons for forgetting traditional flavours.
