Synopsis

Proteins are the most abundant and important organic compounds in living organisms. They are a fundamental component of animal tissues and an essential nutrient for growth. Amino acids play a vital role both as building blocks of proteins and as intermediate products in metabolism. Amino acids are markers of protein quality. Sea snails are an excellent protein source for humans due to their high feed conversion efficiency, their ability to utilize a variety of low-quality biological resources, and the similarity of their meat quality to traditional meat sources. In many countries, there is growing interest in snails as a protein source and a palatable food. The nutritional value and sustainable characteristics of snails are features that attract the attention of markets, researchers, and consumers. Evaluating the nutritional characteristics of different snail species is of great importance for the establishment and commercialization of the snail industry to provide a food source for the food and feed industries. Further research is needed on the use of underutilized marine resources like snails as food for humans and animals.
