A Bibliometric Analysis of GastronomyTourism Publications: The Web of Science Case

Synopsis

This chapter presents a bibliometric analysis aimed at revealing the scientific structure, research trends, and intellectual evolution of studies on gastronomy tourism. The data were obtained from the Web of Science (WoS) Core Collection, which is widely recognized as a reliable and standardized source for bibliometric research. Using key terms such as gastronomy tourism, culinary tourism, and food tourism, publications from 2005 to 2025 were retrieved. After removing duplicates and excluding non-relevant records, only articles with complete metadata were included in the analysis. The study examines publication trends over time, the most productive authors, countries, and journals, as well as the most influential works based on citation patterns. Furthermore, VOSviewer software was employed to visualize keyword co-occurrence networks, co-authorship structures, and co-citation patterns. The findings indicate that the gastronomy tourism literature has expanded significantly over the past decade, with research themes increasingly centering on destination experience, local culinary heritage, and sustainability. By providing a systematic overview of the field’s current scientific landscape, this study offers a theoretical and methodological reference point for future research in gastronomy tourism. The bibliometric findings indicate a significant increase in gastronomy tourism publications in recent years, with the International Journal of Gastronomy and Food Science emerging as the most productive source, and Spain, China, and Turkey as the leading contributing countries. In addition, keyword analysis reveals that “gastronomy tourism,” “gastronomy,” “tourism,” and “local food” constitute the dominant themes within the literature.
