Structural Interrelations Between the Platform Economy and the Cloud Kitchen Model

Synopsis

The process of digitalization has brought about a profound transformation in the organization of economic activities and in the mechanisms of value creation. One of the most prominent manifestations of this transformation, the platform economy, has laid the groundwork for the rapid emergence of the cloud kitchen model in the food and beverage sector. This study aims to examine in detail, within a conceptual framework, the structural interaction between the platform economy and the cloud kitchen model. Within this scope, the study discusses how the digital infrastructure provided by the platform economy integrates with the physical production capacity of cloud kitchens to form a unified and interdependent structure. The conceptual inferences suggest that this model offers strategic advantages such as low fixed costs, flexible scalability, and data-driven operational management. However, these advantages are counterbalanced by structural risks, including high commission dependency on platforms, the requirement for algorithmic visibility, and non-standard forms of employment associated with the gig economy. Furthermore, the shift of consumer trust from physical experience to digital indicators compels businesses to adopt a more proactive approach toward data analytics and digital reputation management. Ultimately, this transformation in the food and beverage sector represents a transition from a space-centered service model to a data-centered ecosystem model. This process should be regarded not merely as a technological innovation, but also as an organizational, economic, and institutional restructuring.
