Artificial Intelligence Perspectives on Kastamonu Cuisine: Comparing Geographical Indication Products with Global Culinary Traditions

Synopsis

This chapter presents a comparative analysis of the cultural content generation capabilities of artificial intelligence-based chatbots through five geographically indicated dishes from Kastamonu cuisine. The study posed identical questions to ChatGPT, Grok, and DeepSeek, evaluating their responses in terms of factual accuracy, cultural context, and scholarly representation. Selected according to a traditional menu structure, the dishes span from appetizers to desserts. For each dish, one descriptive and one comparative question was asked. Findings reveal that AI models possess limited and superficial knowledge of Turkish cuisine, underscoring the need for new academic studies to enhance the digital visibility of regional culinary cultures such as Kastamonu. The results also highlight the importance of embedding cultural context into algorithms to ensure more accurate and contextually rich content in AI-assisted production.
